My partner and I decided we wanted to get out of Austin for a bit last week to celebrate our anniversary, so we booked a stay at Contigo Ranch near Fredericksburg, Texas. Our cottage was one of a handful of newly renovated guest houses on the property, impeccably decorated and everything about the experience was so peaceful. We woke up the first morning and drank coffee outside while deer grazed a few yards away. That evening we drank wine and stared up at more stars than I've ever seen. We're excited to plan a trip back to Contigo Ranch with a group of friends!

You know how a certain song comes on and it instantly reminds you of a past relationship or a time in your life you'd like to forget? Or you maybe something really embarrassing or traumatic happened to you and you can't seem to stop thinking about it? I've been reading Hardwiring Happiness (written by a neuropsychologist), which teaches you how to trick your brain into replacing negative feelings and thoughts with positive ones. It's been especially helpful in teaching me how to be more positive in general. The book explains how to focus more on the positive and push away negative thoughts and anxiety to increase joy and well-being.
Vegan Sausage + Red Bell Pepper Pizza. My partner and I have compiled several favorite recipes – some we created ourselves, others are favorites from blogs and cookbooks – but we frequently return to this one. It's hands down our favorite pizza to make together.
- Dough ball (we grab ours from Whole Foods)
- Spent grain (optional)
- 1 can of pizza sauce
- One red bell pepper, chopped
- One sweet onion, chopped
- 1 tablespoon fennel seeds
- 2 tablespoons red pepper flakes
- 1 tablespoon garlic powder
- Sea salt
- 1 package Sweet Earth Tuscan Style Savory Grounds
- Several basil leaves
- Olive oil
- Go Veggie Parmesan Cheese
Preheat the oven to 375. Start by rolling out the dough onto a counter sprinkled with flour. Once you've shaped the pizza, place on a pizza pan sprinkled with cornstarch (so it doesn't stick to the pan). You can drizzle olive oil on the crust and sprinkle with garlic powder, if you want. Preheat the dough for about 5-8 minutes.
Heat up a medium skillet over medium heat with some olive oil. Cook the chopped onion and red bell pepper in the skillet with some salt, the garlic powder and a tablespoon of red pepper flakes. When the onion and pepper are soft, add the grounds to the skillet and mix. Add the fennel seeds and mix again.
Remove the pizza from the oven, add the pizza sauce (we like to keep put some of the sauce in a small bowl for dipping) and the veggie and sausage mixture and place back into the oven for about 12 minutes. Remove from oven and top with more fennel seeds and red pepper flakes. We like to sprinkle some Go Veggie Parmesan cheese on top and add fresh basil leaves. This pizza is perfect with our favorite wine, Halter Ranch Cabernet! And if you make this, please let me know!
